Recipe- Salsa
Carie Fuhrman, a native of Lake City along the Mississippi River in southeastern Minnesota, has been the community development
director for the city of Princeton since June 6. She resides in Minneapolis and looking to move to the Princeton area.
Fuhrman enjoys spending time with friends and family, especially her niece Dorothy, 2. Other interests include running with Danny, her five-year-old border collie, traveling, water sports (especially water skiing), baking, and working in community development. It’s a career with a lot of variety, involving everything from planning the growth of cities to helping existing businesses and bringing in new ones.
Fuhrman’s recipe does not require cooking.
SALSA
10 Roma tomatoes
2 bunches of green onions
1 green bell pepper
1/4 cup cilantro
1 can black-eye peas (rinsed and drained)
1 can black beans (rinsed and drained)
1 can white shoe peg corn (rinsed and drained)
8 oz. light and zesty Italian dressing
Dice the tomatoes, cut up the green onions, green pepper and cilantro. Mix together. Add remaining ingredients and mix. Chill and serve with your favorite tortilla chips. Enjoy.
