Easy Chili
Deb Erickson and her husband Rocky live in Princeton, where Deb is manager of the
photo department at Coborn’s. Deb is originally from Oregon, and Rocky from Princeton. He owns and operates a business that manufactures and sells snowmobile accessories.
Deb enjoys photography, cooking, gardening, reading, bicycling and other outdoor recreation. Deb and Rocky have a retreat property in northern Wisconsin, where one of Deb’s favorite pastimes is bicycling on a country road named Bakely Circle.
EASY CHILI
1 1/4 lb. hamburger
15 oz. can kidney beans
15 oz. can chili beans
2 cans (6 oz. ea.) tomato paste
28 oz. can crushed tomatoes
8 oz. can tomato sauce
1.25 oz. packet chili seasoning
1 tsp. salt
1 tsp. pepper
1/3 cup sugar
1/3 cup brown sugar
Brown the hamburger and drain. Add the crushed tomatoes and chili seasoning and stir well. Drain the beans and add those along with the rest of the ingredients. Simmer in covered pot on low heat for 30 minutes, stirring often. Add water if chili is too thick.
Optional ingredients – onions, green peppers, sausage.
