Marinated mushrooms

Erin Dohrmann is the special education coordinator for the Princeton School District. She and her husband Barry are originally from Foley, and the couple now lives near there with their two daughters.

Erin assists with planning special ed programs, coordinates student services, trains school staff members and manages the special ed budget.

Erin decided early in life that she wanted to work with children and had originally focused on a medical career in pediatrics. But she later decided to go into education, where she has been working in the special education component now for 15 years. This is her second year in working in the Princeton School District and says she really enjoys her job.

Erin says that she and Barry enjoy camping, hunting and going to car shows, and spend a lot of time cheering on their girls in their extracurricular activities.

Erin’s recipe is for an appetizer.

 

MARINATED MUSHROOMS

2 sticks of butter

2 pkgs. dry Hidden Valley ranch dressing

2 containers button mushrooms

 

Combine ingredients and cook over medium heat until butter is melted and mushrooms have softened, which will require about 30 minutes. Pour into a small crock-pot and cook on low 3-4 hours.
