Recipe: Pumpkin Bars

LeeAnnah Admave is a senior at Princeton High School, ready to graduate on June 7. She says her school years went by very fast and remembers her first day of school. Her main recollection of that first day was going out to recess after lunch and swinging on the swing set. She says that is where she made friends with fellow student Collin Ashley, and that the two seemed to have a special language as they swang on the swings each school day. She says he moved out of the school district about five years later and that she only has a Facebook connection with him now.
Admave plans to attend Alexandria Tech and try studying fashion management. She said she would like to someday own and manage a boutique. She said she would also enjoy working with children, describing children as being “so unique and so fun.”
Admave enjoys volleyball, acrylic painting, reading suspense novels and outdoor sports, including swimming, fishing and four-wheeling. She is in the high school’s Vive Voce choral ensemble this year. She played on a school volleyball team during grades 6-11. She is shown in the photo holding an acrylic painting she was working on in late May.

PUMPKIN BARS
2 cups sugar
1 cup oil
2 cups pumpkin
4 eggs
2 cups flour
2 tsp. baking powder
1/2 tsp. salt
2 tsp. cinnamon
1 tsp. baking soda

Mix ingredients together and spread in a 12×17-inch pan that has been sprayed with Pam. Bake at 350 degrees for 20-25 minutes or until toothpick comes out clean. Let cool before applying frosting.

FROSTING
1 stick butter
8 oz. pkg. cream cheese
2 1/2 cups powdered sugar
1 tsp. vanilla

Mix ingredients together. Spread frosting on bars.
