Recipe: Honey Cookies

Princeton residents Jeff and Jennifer Beckers are graduates of Princeton High School and instructors at Princeton’s South Elementary. Jeff has been teaching kindergarten there for 11 years, and Jennifer has been teaching first grade for seven years.recipe beckers

The couple said the best thing about teaching is watching a child grow throughout the school year and watching a love for learning ignite in their young students.

The couple has two children – son Flynn, 2, and daughter Lucy, 6 months.

Jeff and Jennifer enjoy biking, camping and spending time with family. Besides teaching, Jeff is a college and high school hockey referee and a high school baseball coach. Jennifer enjoys singing, playing piano, gardening and shopping.

This week’s recipe is from Jennifer’s mother, Barb Lueck. Jennifer and Jeff make honey cookies every August in observance of what they call Bee Day. Jennifer’s dad, Dale Lueck, is part owner of Papa Bear Apiaries, which harvests and sells honey in late summer and early autumn. Jennifer explained that Bee Day is when her dad and his brothers and friends extract honey from hives.

HONEY COOKIES

3/4 cup shortening

1 egg

2 cups flour

2 tsp. soda

1/2 tsp. ginger

1 cup sugar

1/4 cup honey

1/2 tsp. salt

2 tsp. cinnamon

Mix ingredients together. Refrigerate a few hours or overnight. Form cooled dough into walnut-size balls. Roll in sugar and bake at 350 degrees for 10-12 minutes.
