Recipe: Popcorn Salad

Melissa Norman is a cashier at the Little Duke’s convenience store in Princeton and her husband Erick owns and operates Erick Norman Painting. She is originally from Brooklyn Park and he is a native of northeast Minneapolis. The couple has three children – Justin, 28, Alyssa, 23, and Erick Jr., 11.

Erick and Melissa enjoy ice fishing, time with family, surfing the Internet, boating and traveling. He also enjoys reading, hunting, bowling, cooking and playing fantasy football and fantasy NASCAR. She also likes baking, playing cards and the outdoors. Melissa’s recipe is a family favorite.



7 crumbled slices of bacon

1 cup chopped celery

1/2 cup chopped onion

1 can sliced and chopped water chestnuts

6 cups Old Dutch gourmet popcorn

1 cup shredded cheese

Chop the celery, onion and water chestnuts and chill. Right before serving add the bacon crumbles, shredded cheese and popcorn to the chilled mixture and mix all together.


1 cup mayo 

1/3 cup sugar

Mix ingredients together.
