Recipe: Banana Bread

Susan Yurecko works in customer service at ABRA Auto Body & Glass in Princeton. Susan is originally from Princeton and her husband Don is from Zimmerman. Don is gas plant manager at Waste Management in Elk River, maintaining engines that are powered by methane gas from the Elk River landfill to turn electrical generators. Susan says the electricity powers many homes in Elk River.
Susan and Don have three children – Nancy, 24, Justin, 21, and David, 15. Susan enjoys camping and the outdoors, especially at lakes and rivers. She and the family sometimes visit the small island on Lake Fremont at Zimmerman when they boat on the lake. She also enjoys baking, cooking, and reading. Don enjoys hunting, fishing and snowmobiling.

BANANA BREAD
1/2 cup oil
2 eggs
2 cups flour
1/2 tsp. baking powder
3 T milk
1 cup sugar
3 to 4 ripe bananas
1 tsp. baking soda
1/2 tsp. salt
dash of vanilla

TOPPING
Cinnamon and sugar

Mix the banana loaf ingredients together and place in greased loaf pan. Sprinkle mixture of cinnamon and sugar on top. Bake in preheated 350-degree oven for 60 minutes. When an inserted toothpick comes out clean, it will be done.
